Sweet (Potato) Beginnings....Our First Dinner Club!



Hello, Ladies! Thanks so much for attending our first dinner club last night. Please email your recipe to Kelly and Megan after each meeting, we will upload all recipes to the blog along with pictures, stories, and memories from our meetings.   1. Kelly's Sweet Potato Chili
    Makes about 6 servings)

    2 tablespoons extra virgin olive oil
    3 large sweet potatoes (about 6 cups), peeled and diced
    1 large yellow onion, diced
    4 jalapeƱos, seeded and minced
    2 cups tomato sauce
    1 cup butternut squash puree
    1 cup vegetable broth
    1 teaspoon chipotle powder
    1 teaspoon ground cumin
    1 teaspoon smoked paprika
    1 – 14.5 ounce can of black beans, drained and rinsed
    Kosher salt
    Freshly ground black pepper

  3. For Eileen's sweet potatoes
    Curry-Spiced Sweet Potatoes

    Ingredients (6 servings)

    6 1/2 cups (1-inch) cubed peeled sweet potato (about 2 pounds)
    1 tablespoon butter
    1/4 cup finely chopped shallots
    1 tablespoon brown sugar
    1/2 teaspoon salt
    1/2 teaspoon curry powder
    1/2 teaspoon ground cumin
    1/4 teaspoon ground cinnamon
    1/8 teaspoon ground red pepper
    1/3 cup half-and-half
    1 tablespoon fresh lemon juice

    Preparation

    1. Place potato in a medium saucepan; cover with water. Bring to a boil. Reduce heat, and simmer 15 minutes or until tender. Drain well; return to pan. Keep warm.
    2. Melt butter in a small nonstick skillet over medium heat. Add shallots to pan; cook 6 minutes or until tender, stirring occasionally. Stir in brown sugar, salt, curry powder, cumin, cinnamon, and red pepper; cook 1 minute, stirring constantly. Add shallot mixture, half-and-half, and lemon juice to potato. Mash potato mixture with a potato masher to desired consistency.

  4. For Kathleen's delicious sweet potato recipe! See below

    Sweet Potato Mixture:

    -5 large sweet potatoes (cut in half & boiled until soft with skins on)
    -1/2 cup of melted butter (1 stick)
    -1 cup of sugar
    -2 beaten eggs
    -1 teaspoon vanilla

    Mash the potatoes after being cooked and add the above ingredients and mix well together. Spread in a 9x 13 pan

    Topping:
    -1 cup of sweetened coconut flakes
    -1 cup of brown sugar
    -1 cup of walnuts (cut or crushed in small peices)
    -2 tablespoons of flour
    -1/2 cup of melted butter (1 stick)

    Mix the above ingredients together to make the topping and spread evenly on top of sweet potato mixture.

    Bake at 300 degrees for 45 minutes
